			<content:encoded><![CDATA[<p>I&#8217;ve rarely been accused of over thinking a situation.  My &#8220;code of the west&#8221; mentality has been good to me through the years, rescuing me many times from the temptation of unnecessary thinking!  Unnecessary thinking can ruin a perfectly good plan, but no thinking at all can be hazardous to your health!  A good case in point is a situation I witnessed last year.  </p>
<p>One brilliantly blue afternoon in late spring my neighbor Joe was preparing for one of his famous cookouts.  He was about to put his brand new brick and mortar barbeque grill through its paces for the first time.  A beautiful charcoal grill, he had personally, to the chagrin of the brick masons, supervised every detail of the project.  It was a gorgeous fireplace style grill with the chimney almost head high, built of the same brick that adorned his house. </p>
<p>The barbeque pit featured a curved flat black steel hood for enclosed cooking, with a warming tray built into the side of the pit to keep foods from getting cold while others cooked longer.  There was even a compartment built on the opposite side to house charcoal and lighter. He was understandably proud of the best barbeque grill in the neighborhood!</p>
<p>Festivities began early with the neighbors arriving around 2:00 pm.  By late afternoon many in the crowd were already feeling the effects of the adult beverages supplied by the host, whom was especially enjoying himself.  Everyone by now had grown tired of listening to an endless monolog by the host about the virtues of his new grill.</p>
<p>The time had come to fire up the grill!  There was only one small problem.  With all the preparations he had made for the cookout, Joe had forgotten charcoal lighter!  Not to be detoured by such a small detail, he went into the tool shed at the back of his yard and brought back a large can of gasoline.  After dumping a huge amount of charcoal into the bottom of the grill, he arranged it into a perfect pyramid. The fire was supposed to burn more consistently this way Joe informed the crowd.</p>
<p>  By now the neighbors had begun realized what Joe was about to do and started yelling at him not to use the gasoline to start the fire.  Offers were made to run next door to get charcoal lighter to no avail.  Joe was determined to inaugurate his grill the proper way; with a large fire!  He also assured everyone that he knew what he was doing!</p>
<p>Joy was enjoying himself, being the star of the show as it were.  He upended the can of fuel over the charcoal and kept pouring even after the briquettes had been thoroughly soaked.  Now came the moment of truth! He lit a match and with a dramatic flare, tossed it onto the charcoal!  Whoooomp!</p>
<p>
Mortar is very porous and does not always adhere perfectly to a surface without leaving a small crack in the mortar joint between bricks.  When a liquid such as water or in this case gasoline fills that crack, it will flow into the base of the structure; in this case the barbeque grill.  The vapors from the gasoline that had flowed into the grill did what gasoline vapors do when they come in contact with a flame.  The grill exploded!</p>
<p>Bricks and mortar blown into pieces, rained from the sky onto all of us who had witnessed the explosion!  No one was hurt because most of the crowd and moved safely away from Joe when they saw what he was about to do.  Joe was slightly injured by a fragment of the grill grazing his forehead.  Nothing serious!</p>
<p>His beautiful barbeque pit was destroyed!  A few seconds before, it was a beautiful example of workmanship; something to be proud of and enjoy for years to come.  Now it was just a pile of rocks!  Joe had apparently never heard that in some cases, alcohol and gasoline don&#8217;t mix!  Warning!  Drinking and starting fires with gasoline can kill you!  Whether you&#8217;re drinking adult beverages or not, do not use gasoline for a charcoal starter!</p>
<p>My neighbor Joe has recovered from the disaster of last year.  He is now making plans to build and even bigger charcoal cooker than the last one.  From the size of the storage area in the barbeque pit, I doubt that he will ever run out of charcoal lighter again!</p>

			<content:encoded><![CDATA[<p>Portable barbecue grills are lots of fun, but you need to know how to transport them safely. You don&#8217;t want a fun event to end in tragedy. <p>There is a growing demand for portable grills and it&#8217;s important that you understand the different features that are out there on the market. A portable grill can be transported to a campsite or to a picnic and be up and running in a matter of minutes. Having a portable grill for use at home has its perks as well. You can move it into the garden or set it up in the garage.</p>
<p>To meet this demand, grill manufacturers have come up with several models. These grills are light, easy to transport, and can be set up easily. They are also budget-friendly, they range in price from $50 to $200.</p>
<p>They should, however, be handled with care especially the propane grills. No one should take chances with natural gas or liquid propane it is highly inflammable and can cause an explosion if handled improperly or in a careless manner.</p>
<p>Make sure that your portable gas grill has no holes or leaks. Though it may appear tedious, you should always test any type of gas grill for leaks. You should not light cigarettes or candles around the grill, as even a small gas leak could trigger an explosion. Also, never tamper with the safety valve fixed on the propane tank.</p>
<p>Similarly, the propane tank should be kept immobile when transporting the grill to another location. It should not be allowed to roll around in the trunk of the car or in the back of a pick-up truck, because that much motion increases the gas pressure inside the tank, and the tank could explode.</p>
<p>Charcoal grills don&#8217;t suffer from these disadvantages. They are less delicate and can be transported with ease. Their only bad point is that they can take hours to light and warm up in damp or rainy weather. On such occasions, it is better to carry a propane grill despite its disadvantages. Also, use caution when transporting any kind of portable grill after using it, as it could be hot.</p>
<p>The choice is ultimately up to you- there is nothing better than a nice juicy steak after a long day of hunting or fishing. 			<content:encoded><![CDATA[<p>The most popular fuel for backyard grilling is charcoal. Charcoal is made by heating wood in the absence of oxygen. The original method of making charcoal was to set fire to a pile of wood and then cover it with dirt and allowing it to simmer. </p>
<p>Todays grilling fuel is processed charcoal briquettes. These little moulded pieces of fuel are made with wood and a clay binder. Many purists dislike artificial binder charcoal. Pure wood charcoal is also available. It comes in chunks rather being moulded into briquettes. </p>
<p>The great thing in cooking in barbecue charcoal is cooking low and slow. The meat cooked in barbecue charcoal is so tender that it falls apart and the taste drives people crazy. The secret is that one should keep a close eye on the fire and have some patience. </p>
<p>Barbecue aficionados prefer charcoal over gas (propane) for the authentic flavor that coal provides. Barbecuing with charcoal is the best way for cooking burgers, steak, chicken or anything over open fire. It adds flavor to the dish. </p>
<p>Careful attention should be paid while lighting the coals. There are a number of ways to start the fire. A charcoal chimney starter is a traditional method for getting a consistent heat from the coals. </p>
<p>Another common method is to soak the charcoal with aliphatic petroleum solvent or pretreated briquettes and light them in a pyramid formation. </p>
<p>The most popular method is to stack the charcoal in a neat pile and saturate it with charcoal lighting fluid, allowing it to settle for a couple of minutes and then applying the match. Charcoal lighting fluid is naphtha, a fairly clean burning fuel. It has a petroleum taste when burnt. </p>
<p>Another method is to use an electric iron to heat the coals. There are electrical charcoal lighting devices, with containers that stack charcoal on top of a sheet of crumpled newspaper and use the newspaper to start the coals glowing. A small propane torch can also be used to fire the coals. Whatever the methods may be, still one can enjoy the smoky taste afforded by the hot coals. </p>
<p>After the coals are ashed, they can be spread around the perimeter of the grill with the meat placed in the center for indirect cooking, or piled together for direct cooking. Water-soaked wood chips of mesquite, cherry, hickory or fruit trees can be added to the coals for flavor. In wood barbecuing, the temperature of the grill is controlled by the amount and distribution of coal within the grill and through careful venting.</p>
<p>Charcoal is inexpensive to buy and is more convenient to use in portable barbecues that can be carried along in any holiday excursions. </p>
<p>Barbecue charcoal grills can be problematic in two ways. First, the charcoal can produce hydrocarbons and tiny soot particles that pollute the air which can aggravate heart and lung problems. Second, when the fat from the meat drips onto the charcoal, polycyclic hydrocarbons and heterocyclic amines form which are carcinogenic compounds that produce cancer. </p>

Sometimes I drive past a barbeque restaurant hoping to get a whiff of smoke from their cooking fires. Just to get a sniff of the heady scent that drifts from genuine pork barbeque cooking on hickory coals, normally will get me through the week until I fire up my own barbeque pit.</p>
<p>The tantalizing fragrance that tempts the taste buds has just for a moment, allowed me to escape the battles of everyday life and rest contentedly in the warm embrace of barbeque smoke. Wouldn&#8217;t it be wonderful to carry that aroma with you where ever you go? Of course that&#8217;s impossible, but I have a solution and the more I think about it the more excited I get. I may be onto something!</p>
<p>Hickory smoked barbeque air fresheners! Instead of having one of those little green cardboard pine trees hanging from your mirror to freshen your car, you have one that has been cut in the shape of a pig. Emanating from that cardboard cut out would be the most tantalizing scent that has ever been offered to the American public; the irresistible aroma of hickory smoked barbeque.</p>
<p>Just think of the market for such a product! While there are different scents available, from apple pie to pine trees, I can&#8217;t find where there is actually a paper pig air freshener. I think my chances are good that it hasn&#8217;t been invented yet. If it were already on the market every son of the south would have one dangling from the mirror on his pick-up truck.</p>
<p>Barbeque down here in Crimson Tide country is more of an art form than it is a method of cooking meat. The paper pig would be like a badge of honor hanging from your mirror, showing everyone that barbeque is king! You could turn the fan in your car up to high, roll down your window a little and blow out some of those fantastic barbeque vapors into the automobile next to you. Wouldn&#8217;t that be something to impress your friends?</p>
<p>After the excitement of the paper pig has generated a fan base of hundreds of thousands of folks across the country, next on the scene could be room air purifiers. I know it&#8217;s sort of a contradiction in terms to call barbeque scented air pure, but it would be an awesome experience to walk into your bedroom and be overcome by the scent of hickory smoked pork barbeque.</p>
<p>Let&#8217;s not forget the perfume and cologne market. Choosing a name for the product would be as important as the fragrance. Something like &#8220;Barbeque Bouquet&#8221; would send sales through the roof! Never again would a man have to guess as to what perfume his date was wearing, because he would know within 10 feet of her exactly what essence of barbeque aroma she had chosen for that romantic evening. Hickory, cherry or even apple would have any red blooded American male swooning after the first hello!</p>
<p>Next of course would be after shave lotion and colognes for men. Television commercials would show a rugged outdoorsman sniffing the wind and smiling at the vision of a two huge Rib Eye steaks sizzling on an outdoor grill, with smoke delicately drifting past his nose. His eyes would suddenly widen and a look of astonishment would turn to joy as he realizes that the beautiful blonde walking toward him is wearing &#8220;Barbeque Bouquet&#8221;!</p>
<p>Spicy meat rubs and sauces would be another outlet for &#8220;Barbeque Bouquet&#8221;. The list of items that could use this idea is staggering! The cardboard pig idea is so fantastic that it boggles the mind when you think of its commercial applications! But those ideas are best left to someone else, because by nature I&#8217;m a lazy man and all this sounds like work!</p>

Adding herbs to season the dish is a good idea as well, allowing for personal taste to take the lead. There are many types of smokers available, such as propane, gas, and electric, yet a cold smoker is a bit more uncommon than other varieties.  </p>
<p>How To Cook With A Cold Smoker</p>
<p>When using the cold-smoker method of smoking fish and other meats, the temperature one uses is far lower than the hot-smoker method.  Fish is most often used with this type of smoking, and should be frozen prior to the process in order to kill any susceptible parasites within the fish.  The fish must stay in a brine solution for a longer period of time as well, and the cooking time is much longer than with the hot-smoker method.</p>
<p>Often, a cold smoker cooks very slowly, from one to five days, depending on the amount of fish that is in the smoker itself.  Different kinds of fish can be placed within the cold smoker, most often salmon or cod.  Herring can also be used, as well as eels.  This is a popular item in European countries, but generally not as well accepted in the U.S.</p>
<p>A homemade cold smoker can be built using a refrigerator, yet it is usually more time consuming than it is worth, and there are many quality brands available on the market.  When cooking fish in this way, the fish can last for many months in the refrigerator, whereas using the hot smoker method, the fish spoil in just a few days.</p>
<p>If one desires to preserve their meats or fish, a cold smoker is the better option.  Wood chips or powder is used in the cold smoker as well.
